Lamb and beef tripe and smoked shank are traditional dishes in Beijing, served with mustardy cabbage and bean sauce to counter the gamey tripe taste. A popular Sichuan dish that contains tripe is spicy fuqi feipian, made of thinly sliced beef and beef offal, including the heart, tongue and tripe, and various spices, including Sichuan pepper.
