Prepare the Lemon Gin Mayonnaise

  • Lime juice, fresh 1 T.
  • Lemon zest 2 T.
  • Gin 4.5 floz
  • Hellmann's Real Mayonnaise 1.5 cup
  • Tarragon, fresh, chopped 1 T.

Prepare the Onion Jam

  • Sweet Onion, julienne 2 each
  • Vegetable oil 2 T.
  • Sherry 0.25 cup
  • Apple cider vinegar 0.25 cup
  • Sugar 0.25 cup
  • Dijon Mustard 2 T.
  • Salt, Kosher 1 t
  • Butter, unsalted 1 T.

Prepare the Burger Patties

  • Italian seasoning 3 T.
  • Ground Turkey 3.75 lbs.
  • Salt, Kosher 2.5 t

Prepare the Slider Burgers

  • Lemon Gin Mayonnaise, prepared 1.5 cup
  • Pretzel slider buns, toasted 30 each
  • Tomato 30 slices
  • Goat Cheese 12 oz
  • Onion Jam, prepared 2 cup
  • Bacon, cooked 30 slices
  • Spinach, as needed
  • Ground Turkey Patties, prepared 30 each
  1. Prepare the Lemon Gin Mayonnaise

    • Combine gin, lemon zest and juice in pan and cook off alcohol. Reducing to 3 oz.
    • Combine gin and lemon mixture with mayonnaise and tarragon. Chill until use.
  2. Prepare the Onion Jam

    • Cook onions with oil for 20 minutes, stirring often.
    • Add remaining ingredients except butter and allow to thicken for additional 10 minutes.
    • Remove from heat, add butter, and stir until melted. Chill until use.
  3. Prepare the Burger Patties

    • Combine all ingredients and mix well.
    • Form 30 (2 oz.) patties and chill until use.
  4. Prepare the Slider Burgers

    • Cook burgers until the internal temperature reaches 165° F.
    • Spread Lemon Gin Mayonnaise on both sides of buns.
    • Build burgers with remaining ingredients.
