Turkey Sliders
A turkey patty topped with spinach, peppered bacon, onion jam, goat cheese, and tomato with lemon gin mayonnaise on a pretzel slider bun.

Prepare the Lemon Gin Mayonnaise

Gin 125.0 ml

Lemon zest 30.0 ml

Lime juice, freshly squeezed 15.0 ml

Tarragon, fresh, chopped 5.0 g
Prepare the Onion Jam

Sweet onion, julienne 2.0 each

Apple cider vinegar 65.0 ml

Butter, unsalted 15.0 ml
Prepare the Burger Patties

Ground turkey 1.7 kg

Italian seasoning 25.0 g

Salt, kosher, to taste
Prepare the Sliders

Pretzel slider buns, toasted 30.0 each

Tomato 30.0 slices
-
Bacon, cooked 30.0 slices

Ground yurkey patties, prepared 30.0 each

Lemon gin mayonnaise, prepared 375.0 ml

Goat cheese 450.0 g

Onion jam, prepared 500.0 ml

Spinach 115.0 g
Preparation

Prepare the Lemon Gin Mayonnaise
- Combine gin, lemon zest and juice in pan and cook off alcohol. Reducing to 90 ml.
- Combine gin and lemon mixture with mayonnaise and tarragon. Chill until use.

Prepare the Onion Jam
- Cook onions with oil for 20 minutes, stirring often.
- Add remaining ingredients except butter and allow to thicken for additional 10 minutes.
- Remove from heat, add butter, and stir until melted. Chill until use.

Prepare the Burger Patties
- Combine all ingredients and mix well.
- Form 30 (60 g.) patties and chill until use.

Prepare the Sliders
- Cook burgers until the internal temperature reaches 75° C.
- Spread Lemon Gin Mayonnaise on both sides of buns.
- Build burgers with remaining ingredients.
