Prepare the Lemon Gin Mayonnaise

Prepare the Onion Jam

  • Sweet onion, julienne 2.0 each
  • Sherry 65.0 ml
  • Vegetable oil 30.0 ml
  • Apple cider vinegar 65.0 ml
  • Sugar 50.0 g
  • Maille Dijon Originale Mustard 4 x 4.1 kg 30.0 ml
  • Butter, unsalted 15.0 ml

Prepare the Burger Patties

  • Ground turkey 1.7 kg
  • Italian seasoning 25.0 g
  • Salt, kosher, to taste

Prepare the Sliders

  • Pretzel slider buns, toasted 30.0 each
  • Tomato 30.0 slices
  • Bacon, cooked 30.0 slices
  • Ground yurkey patties, prepared 30.0 each
  • Lemon gin mayonnaise, prepared 375.0 ml
  • Goat cheese 450.0 g
  • Onion jam, prepared 500.0 ml
  • Spinach 115.0 g
  1. Prepare the Lemon Gin Mayonnaise

    • Combine gin, lemon zest and juice in pan and cook off alcohol. Reducing to 90 ml.
    • Combine gin and lemon mixture with mayonnaise and tarragon. Chill until use.
  2. Prepare the Onion Jam

    • Cook onions with oil for 20 minutes, stirring often.
    • Add remaining ingredients except butter and allow to thicken for additional 10 minutes.
    • Remove from heat, add butter, and stir until melted. Chill until use.
  3. Prepare the Burger Patties

    • Combine all ingredients and mix well.
    • Form 30 (60 g.) patties and chill until use.
  4. Prepare the Sliders

    • Cook burgers until the internal temperature reaches 75° C.
    • Spread Lemon Gin Mayonnaise on both sides of buns.
    • Build burgers with remaining ingredients.
