Prepare the Gochujang Mayonnaise

Prepare the Pickled Red Onions

  • Red onion, julienne 375 g
  • Apple cider vinegar 500 ml
  • Sugar 25 g
  • Salt, kosher 35 g

Prepare the Burger

  • Ground beef patty 10 each
  • Pepper Jack Cheese, sliced 10 slices
  • Green onions, charred, chopped 10 each
  • Hamburger buns, toasted 10 each
  • Kosher salt and black pepper to taste 1 pinch
  • Gochujang mayonnaise, prepared 300 ml
  • Pickled red onion, prepared 290 g
  • Cilantro 50 g
  1. Prepare the Gochujang Mayonnaise

    • Combine ingredients and mix well. Chill until use.
  2. Prepare the Pickled Red Onions

    • Bring all ingredients except the onions to a boil.
    • Remove from heat and add onions.
    • Allow onions to cool at room temperature, strain and chill.
  3. Prepare the Burger

    • Season and cook patties to desired temperature.
    • Spread Gochujang Mayonnaise on buns.
    • Build the burger with remaining ingredients.
