Tostadas de Pollo (Pulled Chicken Tostadas)

Prepare the Chicken

Chicken thighs, boneless and skinless 2.5 kg

Onions, large, sliced 2.0 each

Cilantro 1.0 bunch

Diced tomatoes, canned (28 oz/ 850 g) 2.0 each

Chipotle powder 40.0 ml
Prepare the Tostadas

Tostadas (Corn) 30.0 each

Guacamole, prepared 500.0 ml

Mexican crema 250.0 ml

Queso fresco, crumbled 500.0 ml

Radishes, sliced, as needed

Jalapenos, sliced (optional)
Preparation

Prepare the Chicken
- In a large pot, add cleaned chicken thighs, onions, cilantro (with stems), canned tomatoes, chipotle andKnorr® Professional Ultimate Chicken Bouillon Base.
- Add prepared Knorr® Professional Ultimate Chicken Bouillon Base. Bring to a simmer and cook, stirring occasionally for about 45 minutes. Once chicken is fork tender, use a pair of tongs to shred.

Prepare the Tostadas
- For each portion, spread guacamole on 3 tostadas. Top with shredded chicken, then garnish with guacamole, crema, queso fresco, radishes and jalapenos.
