Birria is a traditional dish from the state of Jalisco. Eaten for breakfast on special occasions (and reputed as a hangover cure), it consists of goat stew, containing chopped goat meat, dried chillies and sortidas, which is a mixture of meat, bone and cartilage. It is served with quesadillas with bone marrow and a spicy salsa, made from chile de arbol, lime juice and onions.
