Prepare the Lamb Patties

  • Ground lamb 1.6 kg
  • Parsley, chopped 20 g
  • Garlic 25 g
  • Basil, dried 4 g
  • Oregano, dried 5 g
  • Salt, kosher 25 g

Prepare the Pickled Radishes

  • Salt, kosher 50 g
  • Sugar 38 g
  • Apple cider vinegar 750 ml
  • Radish 450 g

Prepare the Burger

  • Tomato 20 slices
  • Herbed lamb patty 10 each
  • Pickled Radishes, prepared 450 g
  • Zucchini, grilled 20 slices
  • Caramelized onions 500 g
  • Feta 375 g
  • Chive and Garlic Mayonnaise, prepared 300 ml
  • Whole wheat bun, toasted 10 each
  1. Prepare the Chive and Garlic Mayonnaise

    • Combine all ingredients and chill.
  2. Prepare the Lamb Patties

    • Combine all ingredients and form into patties. Chill.
  3. Prepare the Pickled Radishes

    • Bring all ingredients except the radishes to a boil.
    • Remove from heat and add radishes.
    • Allow radishes to cool at room temperature and chill.
  4. Prepare the Burger

    • Cook patty to desired doneness.
    • Spread Chive and Garlic Mayonnaise on buns.
    • Build the burger.
