Prepare the Caramelized Leek and Onion Jam

  • Olive oil
  • Leeks, cleaned, sliced 2 ea
  • Shallot, medium dice 2 ea
  • Sweet onion, large, medium dice 1 ea
  • Apple cider vinegar 240 ml
  • Knorr® Ultimate Roasted Chicken Base Gluten Free 175 ml
  • Honey 90 ml
  • cassonade 105 ml
  • Sel et poivre au goût

Prepare the Wilted Kale

Prepare the Burger

  • Swiss cheese 10 slices
  • Kale leaves, ribs removed 450 g
  • Apple juice 120 ml
  • Apple cider vinegar
  • cassonade
  • Onions, shallots, diced 1 each
  • Sel et poivre au goût

  • Lemon Mayonnaise 300 ml
  • Burger bun, toasted 10 ea
  • Beef, gound, 80/20, formed into 6 oz. patties 10 ea
  • Swiss cheese
  • Fall Kale, prepared 300 ml
  • Leek and Onion Jam, prepared 300 ml
  • Sel et poivre au goût
  • Apple, sliced 1/4" thick 10 tranches
  1. Prepare the Caramelized Leek and Onion Jam

    • Combine leeks, shallots, and onions in a pan and caramelize. Once caramelized, add remaining ingredients and simmer until reduced to a thick jam. Reserve refrigerated.
  2. Prepare the Wilted Kale

    • Bring all ingredients to a simmer except kale. Add kale and lightly simmer until tender. Refrigerate for service.
  3. Prepare the Burger

    • Rewarm the Wilted Kale.
    • To assemble, spread 1 T. Hellmann’s® Real Mayonnaise on each side of the bun, then add beef patty and top with Swiss cheese.
    • Add Wilted Kale and top with 1 oz. of the Caramelized Leek and Onion Jam, and one slice of apple. Serve.
