Mile High Meatloaf Burger
A meatloaf patty grilled to order and topped with creamy cheddar and chive mashed potatoes, fried onion rings and a brown gravy mayonnaise.

Prepare Cheddar and Chive Mashed Potatoes

Heavy cream 125.0 ml

Chives, fresh, chopped 24.0 g

Cheddar Cheese, shredded 50.0 g
Prepare the Meatloaf

Beef, ground, 80/20 125.0 kg

Ketchup 120.0 ml

Worcestershire sauce 15.0 ml

Onion, medium, small dice 1.0 each

Parsley, fresh, chopped 13.0 g

Smoked paprika 20.0 g

Italian seasoning 6.0 g

Salt and Pepper, to taste

Granulated garlic 17.0 g

Thyme, fresh, chopped 4.0 g

Panko bread crumbs 100.0 g
Assemble the Burger

Meatloaf patties, prepared 10.0 each

Brown Gravy Mayonnaise, prepared 300.0 ml

Onion rings, fried 20.0 each

Cheddar and Chive Mashed Potatoes, prepared 600.0 ml

Texas toast, grilled 20.0 slices
Preparation

Prepare Brown Gravy Mayonnaise
- Combine ingredients and whisk until well combined. Hold refrigerated until service.

Prepare Cheddar and Chive Mashed Potatoes
- Fold in heavy whipping cream, chives and cheddar cheese to the prepared mashed potatoes. Hold hot for service.

Prepare the Meatloaf
- Combine all ingredients and form into a loaf. Bake at180 Cfor 1 hour. Set aside and cool.
- For service, cut the loaf in 10 slices.
- Cook each slice to order on a griddle.

Assemble the Burger
- Spread the brown gravy mayonnaise on each piece of toast. Add the griddled meatloaf patty, top with60 mlcheddar and chive mashed potatoes and 2 fried onion rings.
