Prepare Brown Gravy Mayonnaise

Prepare Cheddar and Chive Mashed Potatoes

  • Mashed potatoes 680 g
  • Heavy cream 125 ml
  • Chives, fresh, chopped 24 g
  • Cheddar Cheese, shredded 50 g

Prepare the Meatloaf

  • Beef, ground, 80/20 125 kg
  • Hellmann's® Extra Heavy Mayonnaise 120 ml
  • Ketchup 120 ml
  • Worcestershire sauce 15 ml
  • Onion, medium, small dice 1 each
  • Parsley, fresh, chopped 13 g
  • Smoked paprika 20 g
  • Italian seasoning 6 g
  • Salt and Pepper, to taste
  • Granulated garlic 17 g
  • Thyme, fresh, chopped 4 g
  • Panko bread crumbs 100 g

Assemble the Burger

  • Meatloaf Patties, prepared 10 each
  • Brown Gravy Mayonnaise, prepared 300 ml
  • Onion rings, fried 20 each
  • Cheddar and Chive Mashed Potatoes, prepared 600 ml
  • Texas toast, grilled 20 slices
  1. Prepare Brown Gravy Mayonnaise

    • Combine ingredients and whisk until well combined. Hold refrigerated until service.
  2. Prepare Cheddar and Chive Mashed Potatoes

    • Fold in heavy whipping cream, chives and cheddar cheese to the prepared mashed potatoes. Hold hot for service.
  3. Prepare the Meatloaf

    • Combine all ingredients and form into a loaf. Bake at180 Cfor 1 hour. Set aside and cool.
    • For service, cut the loaf in 10 slices.
    • Cook each slice to order on a griddle.
  4. Assemble the Burger

    • Spread the brown gravy mayonnaise on each piece of toast. Add the griddled meatloaf patty, top with60 mlcheddar and chive mashed potatoes and 2 fried onion rings.
