Grapefruit Jalapeno Relish

  • Chiles, jalapeno 2 each
  • Green onions, sliced 0.5 cup
  • Sugar 2 Tbsp
  • Olive oil 60 ml
  • Red wine vinegar 15 ml
  • Grapefruit, segments, diced 2 cups
  • Salt and Pepper, to taste

Avocado Cream

Prepare Seared Cod

  • Sablefish, black cod 10 each
  • Grapefruit juice 120 ml
  • Mirin 60 ml
  • Soy sauce 60 ml
  • Shiro Miso paste (Miso White) 60 ml
  • Black pepper, freshly ground 1 tsp
  • Canola oil
  1. Grapefruit Jalapeno Relish

    • Char the jalapeno on a grill or over an open flame. Once cooled, seed and mince.
    • Combine with all remaining ingredients and refrigerate until ready to use.
  2. Avocado Cream

    • Combine all ingredients in a food processor and blend until smooth. Keep refrigerated until ready to use.
  3. Prepare Seared Cod

    • In a bowl combine all ingredients and marinate cod, refrigerated, 30 minutes.
  4. To Serve

    • Pan sear cod until desired doneness.
    • Serve on top of avocado cream and top with grapefruit relish.
