Seared Black Cod with Grapefruit Relish
The delicate, buttery fish is marinated in sweet umami flavor, accented by the refreshing citrus relish.

Grapefruit Jalapeno Relish

Jalapeño chiles 2.0 each

Green onions, sliced 0.5 cup

Red wine vinegar 15.0 ml

Grapefruit, segments, diced 2.0 cups

Avocado Cream

Avocado, peeled and pit removed 1.0 each

Garlic cloves 2.0 each

Bird’s eye chili 1.0 each

Lime, juiced 1.0 each
Prepare Seared Cod

Sablefish, black cod 10.0 each

Grapefruit juice 60.0 ml

Mirin 60.0 ml

Soy sauce, dark 60.0 ml

Shiro Miso paste (Miso White) 60.0 ml

Black pepper, freshly ground 1.0 tsp

Canola oil
Preparation

Grapefruit Jalapeno Relish
- Char the jalapeno on a grill or over an open flame. Once cooled, seed and mince.
- Combine with all remaining ingredients and refrigerate until ready to use.

Avocado Cream
- Combine all ingredients in a food processor and blend until smooth. Keep refrigerated until ready to use.

Prepare Seared Cod
- In a bowl combine all ingredients and marinate cod, refrigerated, 30 minutes.
- Pan sear cod until desired doneness.

To Serve
- Serve Black Cod on top of avocado cream and top with grapefruit relish.
