Big Nyonya restaurant is owned by Masterchef Datuk Kenny Chan, who combines Chinese cooking techniques with Malay ingredients. Sambal belacan is a signature Malaysian spicy condiment in Nonya Restaurant. It is made by combining lime leaf, vinegar, chilli and shrimp paste. It appears in many of chef Chan’s dishes, including okra belacan - a pungent, spicy dish, best eaten with rice.
