Prepare Salad

  • Hellmann’s® Light Raspberry Vinaigrette 30 ml
  • Fennel, thin slice 190 ml
  • Apple, sliced 190 ml
  • Radish, thin sliced 30 ml
  • Cherry peppers, hot, sliced 15 ml
  • Herbed goat cheese, crumbles 30 ml
  • Crispy prosciutto, crumbles 15 ml
  • Pickled Cherries, see related recipe 85 ml
  • Dried cherries 15 ml

Prepare Pickled Cherries

  • Red wine vinegar 65 ml
  • Water 65 ml
  • Sherry cooking wine 30 ml
  • Sugar 8 ml
  • Black Pepper 3 ml
  • Cilantro, chopped 3 ml
  • Crushed red pepper 3 ml
  • Dried cherries 85 ml
  1. Prepare Salad

    Combine dressing, fennel, apple, cherry peppers, and toss until evenly coated. Top with goat cheese, crispy prosciutto pieces, Pickled Cherries, and fennel fronds.
  2. Prepare Pickled Cherries

    Combine all ingredients except the dried cherries in a pan and bring to a simmer. Stir to dissolve sugar and remove from heat. Add dried cherries and cool.
