Prepare the Soup

  • Garlic, chopped 4 cl
  • Knorr® Professional Liquid Concentrated Beef Flavor Base, prepared 1 gal
  • Green onions, sliced thin 0.25 cup
  • Rosemary, fresh, finely chopped 1 T.

Prepare the Roasted Onions

  • Sweet onions, peeled and halved 3 lbs.
  • Oil, as needed
  • Kosher salt and black pepper to taste 1 pinch
  1. Prepare the Soup

    • Sweat garlic in small amount of oil for 1 minute.
    • Add diced, roasted onions (sub recipe below).
    • Add fresh rosemary.
    • Add Knorr® Liquid Concentrated Beef Base and bring to a simmer.
    • Simmer for 20 minutes.
    • At service, garnish with sliced green onions.
  2. Prepare the Roasted Onions

    • Coat onions with oil and season with salt and pepper.
    • Roast onions at 350 degrees for approx. 30 minutes or until tender.
    • Cool onions and cut into large dice
