Prepare Burger Patties

  • Red onions, medium 1.0 each
  • Garlic cloves 4.0 each
  • Green zucchini 280.0 g
  • Yellow zucchini 280.0 g
  • Tofu 450.0 g
  • Olive oil, as needed
  • Chickpeas 285.0 g
  • Salt and pepper to taste
  • Flat-leaf parsley, finely chopped 8.0 g

Prepare Tomato Relish

  • Red chili pepper 1.0 each
  • Cherry tomato, red 225.0 g
  • Cherry tomato, yellow 225.0 g
  • Sherry vinegar 30.0 ml
  • Basil chiffonade 2.0 g

Prepare the Mustard Mayonnaise

Prepare the Burger

  • Hamburger buns 10.0 each
  • Burger patties, prepared 10.0 each
  • Tomato relish, prepared
  • Mustard mayonnaise, prepared
  • Mixed greens 70.0 g
  1. Prepare Burger Patties

    • Finely chop the onion, garlic, zucchini and tofu.
    • Sweat the onion and garlic in olive oil. Add the zucchini and tofu, sauté until most of the moister is evaporated, then allow the mixture to cool.
    • Puree the chickpeas and combine with the vegetable base, season with salt, pepper, olive oil and finely chopped parsley.
    • Using a round mold, make 10 firm burger patties of approx. 100 g each.
  2. Prepare Tomato Relish

    • Finely chop the red onion and chili pepper.
    • Sweat onion and chili. Add tomatoes to the hot pan.
    • Add the sherry vinegar and basil, season with salt and pepper, allow to cool.
  3. Prepare the Mustard Mayonnaise

    • Mix Hellmann's® Real mayonnaise withMaille Old style and Dijon mustard.
  4. Prepare the Burger

    • Pan sear the burgers and finish in the oven. Warm the burger bun.
    • Assemble the burger with prepared tomato relish, tofu burger and top it with the prepared mustard mayonnaise and mixed greens.
