Spicy Miso Soba Noodle Salad

  • Hellmann’s® Sesame Thai Vinaigrette Dressing 15 ml
  • Soba Noodles, cooked 160 ml
  • Edamame, shelled 30 ml
  • Fava Bean sprouts 30 ml
  • Snow peas, whole 30 ml
  • Bell pepper, julienned/matchstick 30 ml
  • Nori, julienned. As needed
  • Umami Dressing 30 ml
  • Spiced Almonds 15 ml
  • Miso Tofu 65 ml

Prepare Umami Dressing

Prepare Spiced Almonds

  • Almonds, whole 250 ml
  • Olive oil 1 ml
  • Garlic powder 1 ml
  • Cayenne pepper 1 ml

Prepare Miso Tofu

  • Sesame Oil 65 ml
  • Mirin 65 ml
  • Miso paste 125 ml
  • Soy sauce, low sodium 65 ml
  • Vegetable oil 15 ml
  • Tofu, firm 125 ml
  1. Spicy Miso Soba Noodle Salad

    • Combine Hellmann’s® Sesame Thai Vinaigrette with soba noodles and toss until coated.
    • Drizzle the Umami Dressing over the noodles. Top with remaining ingredients.
  2. Prepare Umami Dressing

    Combine all ingredients and whisk until uniform.
  3. Prepare Spiced Almonds

    Combine all ingredients and toss until almonds are well seasoned, roast in the oven at 350°F until toasted.
  4. Prepare Miso Tofu

    • To make miso marinade, combine sesame oil, mirin, miso paste, and soy sauce. Whisk.
    • Drain and pat dry tofu and pan fry with oil until crispy. In a mixing bowl, combine crispy tofu and 1 T of miso marinade and toss until the tofu is coated.
