Preparation

  1. Preparing chicken

    • Season chicken with salt and pepper. Add to a wide bottom pot or pan. You can overlap the chicken, if needed. Add enough prepared chicken stock to cover the chicken by 1 inch.
    • Bring the water to a boil over high heat, then reduce the heat to low and let the chicken simmer until it reaches an internal temperature of 165F or is no longer pink in the center, about 12-15 minutes. Once the chicken is cooked, remove from pot, and let rest until cool enough to handle.
    • Shred chicken with a stand mixer. Combine with BBQ sauce. 
  2. Preparing coleslaw

    5 minutes, plus time to chill
    • Mix Hellmann’s Mayonnaise, vinegar, sugar, salt, and pepper in a bowl.
    • Combine with green cabbage, purple cabbage, and carrots. Refrigerate at least 1 hour before serving to allow flavors to blend.
  3. Assembling sandwich

    10 minutes
    • Lightly toast buns by placing in a 350 degree oven for 3 minutes inside side up.
    • Assemble sandwich by adding shredded BBQ chicken to bottom bun, then top with pickles, coleslaw, and top bun.
    TIP: Prepare the BBQ chicken in advance and freeze for up to 3 months or refrigerate for up to 4 days.
