Prepare Creamy Orange and Za’atar Dressing

Prepare Pita Croutons

  • Pita, cut into bite sized pieces 5.0 each
  • Olive oil, as needed
  • Za’atar, to taste

Finish the Salad

  • Whole wheat couscous, cooked 1.6 kg
  • Cilantro, chopped 40.0 g
  • Parsley, chopped 40.0 g
  • Cucumber, medium dice 300.0 g
  • Blood orange, thin sliced, grilled, quartered 450.0 g
  • Avocado, medium, large dice 5.0 each
  • Preserved lemon, prepared, as needed
  • Creamy Orange and Za’atar Dressing, prepared
  • Pita croutons, prepared

A Mediterranean style couscous salad with fresh, crunchy textures and bright flavors.



  1. Prepare Creamy Orange and Za’atar Dressing

    • Combine all ingredients and whisk.
  2. Prepare Pita Croutons

    • Toss pita with oil and season with za’atar. Bake in a 200°C for 5 minutes or until crisp. Cool and store.
  3. Finish the Salad

    • Combine couscous with prepared dressing, za’atar, herbs and cucumber. Top with remaining ingredients and drizzle with additional dressing.
