  1. Shrimp Marinade:

    • In a medium-sized bowl, combine peeled and deveined shrimp with spices and vegetable oil.
    • Cover with plastic wrap and refrigerate for at least 15 minutes.
    • For best results, marinate the shrimp for 2 hours.
    • Place a large cast-iron pan over high heat.
    • Once smoking hot, add the marinated shrimp and cook until charred on one side and opaque almost cooked through on the other, about 5 minutes.
    • Flip briefly to ensure thorough cooking, then transfer the shrimp to a plate to cool completely.
    • Once cooled, finely chop the shrimp, draining off any excess liquid.
    • Store covered in the refrigerator until needed.
  2. Prepare Zip Zip Sauce Featuring Hellmann's:

    • In a medium-sized mixing bowl, combine Hellmann's mayonnaise, spices, salt, sugar, hot sauce, and Worcestershire sauce.
    • Cover and refrigerate for at least 15 minutes to allow all the flavors to meld.
  3. Sandwich Assembly:

    • In a mixing bowl, combine the finely chopped, charred shrimp with the Zip Zip Sauce Featuring Hellmann's, pickled jalapenos, onions, and lemon juice.
    • Place a large cast-iron pan over medium heat.
    • Spread a thin layer of mayonnaise on one side of each piece of bread, then place one of the pieces in the preheated pan, mayonnaise side down.
    • Add one slice of Monterey Jack cheese to the bread in the pan, followed by two tablespoons of shrimp salad, spreading evenly edge to edge.
    • Top with another slice of Monterey Jack cheese and the other slice of bread, mayonnaise side up.
    • Cook sandwiches for about 5 minutes on each side until golden brown and crispy.
    • Once toasted, transfer the pan to a 176°C oven and cook for an additional 5 minutes until the cheese is melted and gooey.
    • To serve, cut each sandwich in half with a bread knife and serve immediately with additional side of Hellmann’s Zip Zip Sauce for dipping.
